Field of research: Conversion of biogenic waste streams to high valuable food products

Field of Research

In food industry a huge amount of biogenic waste streams is produced as side products, which cannot be applied for further processing. As a result these biogenic waste streams are preferable applied as feed stock for animals or thermal energy production. To avoid this loss a promising approach is the utilization of waste streams as substrates for biotechnical processes. Especially some edible basidiomycota are industrially bred and applied in asia as medicinal fungi.

Objective of the project is the application of different biogenic waste streams for submerged cultivation of the fungus Hericium erinaceus. The focus of this study is to optimize the growth of the fungus as well as the stimulation of production of erinacines. These molecules are said to cause the medicative effect of the fungus. Beside the development of an optimal set up for fermentation, established methods of downstream processing are performed and modified to purify the molecules of interest
